Eating raw tomatoes and tomato sauce daily reduced the risk for hepatic steatosis in a small trial of adults with metabolic dysfunction-associated steatotic liver disease (MASLD).
METHODOLOGY
- The researchers randomized 79 adults (median age, about 58 years; about 70% men) with MASLD and a BMI ≤ 30 to a tomato-rich diet (42 participants) or a tomato-free diet (37 participants) for 6 weeks.
- The intervention group ate 200 g of raw tomatoes and 50 g of tomato sauce daily; control individuals did not eat tomatoes in any form.
- The researchers measured liver fat using the FibroScan-based controlled attenuation parameter (CAP) at baseline and follow-up.
- Secondary outcomes included DEXA-measured body composition, liver stiffness, and metabolic and biochemical markers.

LIMITATIONS
The study had several limitations. The sample size was small, the duration was short, and it was a single-center study. All participants had a BMI ≤ 30, so the results may not generalize to patients with obesity, who make up most MASLD cases in clinical practice. Adherence was self-reported. The study did not measure circulating lycopene or carotenoid levels, so the mechanism behind the hepatic steatosis reduction remains unclear.
